This should give you enough understanding about micro-controllers and you should be able to use any high-end micro-controllers.For programming 8051 you can use Keil software and then Flash programmer to program the IC. For this also you can get ready made kits where you can just plug it in and start programming.Now that you are confident with the hw and sw part individually, you can start combining things. Get an output from your hardware, give it to the micro-controller for processing and there you are with your new product ready.
