How do you sign off a web design remotely?
I just get email approval. I do all my development on a development server that I control. Once the site is complete, I submit it to the client for review. After any feedback and revision, I simply ask them to confirm via email and pay (either credit card, Paypal, or... ugh... mailing me a check). Once I have that confirmation (and final payment), I migrate the site and send them email confirmation that the site is complete. I then archive all of my emails so that I have them for reference if anything comes up.

In my experience, I've seen a huge preference for EDI invoices over PDF for electronic invoicing. About 15 years ago, I worked as a developer for a software consulting company, and I created a couple custom EDI interfaces. I don't recall PDFs ever being mentioned. A few years later, I switched to a different department that designs and maintains application software (which later became a separate company). Because customer demand for EDI capability was high, one of the first things I did was rewrite the EDI interface so it was more flexible and easier to use. I don't work with that stuff directly these days, but the department that handles that continues to grow. We don't technically use the EDI format directly now though. WalMart was the last holdout that I recall, where for a time we ended up doing the translation ourselves because they forced our customers to dial in (yeah, really) directly to them. Now, when our customers have trading partners that require EDI, we'll send XML through a third party we have a business relationship with, and they'll handle the specifics. Otherwise we use either XML or whatever special format the other side is requesting and typically send it directly to cut down the expense (especially if both sides are using our software). I followed up on this with the person who handles this now in our company, and digitally signed PDFs aren't on our radar. He mentioned a few additional authentication steps (I don't recall the specifics) that some companies require, but it wasn't signed PDF.
