You are not alone. We see this same problem, but for other reasons.
The problem comes from the fact that email clients don't always recognize a signature as such. The first email client that we tried recognized a signature as a document that would require the signature to be signed using the same email address as the document. That's how our clients would sign for us.
The second, and most common email client, didn't recognize it at all, and the email clients we were using wouldn't actually allow the person to be signed over email. The only way for the email client to recognize that a signature is required is for the person to send the document over email.
As a result, a lot of the time, when someone wants to sign a document over email, they find their signature on a sheet of paper in their inbox, or they are signed for by someone else, and they simply can't get this paper into the computer to sign it. It's not easy to get the signature into the computer, unless you copy the signature to another word file.
You might consider having someone else sign over email, or having your signature appear on the paper. This is an issue with both online and offline signatures, but there are some things you can do with the paper that will avoid this problem.

I tried all methods in this article to convert documents in Pages. The results are not as expected. Please let me know if you can provide me with some explanation. It's not easy to convert documents in Pages. The only option is to convert to another file format like PDF or DOCX which is more complex than the simple PDF. Hi there: I can't convert the documents because my computer is on Windows 7 and I've tried all possible methods in this article. The result was negative.
