If you do not want people to digitally sign your pdf, then you may create an encrypted pdf. When you create a new pdf, it will have the same name, but no encryption. So, if you are concerned about privacy when sending documents with encryption, you have a few options: Use an encrypted email program like BitTorrent, use a private cloud service like Box or Google Docs, or use a cloud service that can send you signed (encrypted) pdfs for you. Of course, you still need to be able to decrypt the files later.
