How do you sign something on a pdf?
A: You need the pdf or .pdf that is on file (in your home directory) for your signature. If you don't have the file, you don't actually have a signature for the document - it is just a signature. It doesn't really give you any signature of your own.

If you want to use your email address you have to know what it is and then you need to know a little bit of how it is used in order to set it up. Then, you will have to learn the format of the mail that the email will send out and set it up accordingly. Then, when you send it out you have to know what it looks like and you'll learn from your mistakes. This is a lot more work than just using a personal address like "John Doe".
