oh so Andy what are we doing here at the Shelbourne tonight so we are actually officially launching in store in Miami and I wanted to get together with you because you are a legendary caterer in the area and learn a little bit from your experience that's absolutely awesome and I'm happy to be here of course I like to always say of my age I'm happy to be anywhere let's go talk out in the Sun [Music] tell me about how you got started in this business I've been always been an entrepreneur I've always been interested in making money for my self and not relying on other people now when I graduated it was during Vietnam so I ended up going to naval officer Cantonese School in Newport Rhode Island and the fun graduation I went to Monterey California where for the next three and a half years I managed officers clubs and hotels for officers it was a great learning experience I was only another 22 23 24 and I had 180 people under my command so it was a good good learning experience so after four years I had the opportunity of a lifetime and I formed my own company and went to work as a caterer for a downtown business mans club in the rest was history it was absolutely unbelievable from there I expanded for my own company off-premise as well as catered for the club members and have grown steadily ever since so now we're in our own commissary we have our own venue and we're truly truly truly blessed I have a great team of employees who are amazing and that enables me to sit over here with you by the pool while they're over there catering I think we have four events tonight in your opinion what constitutes what makes a great important a great employee is someone who is passionate someone who wants to be there we can train the essentials we can train the various things how to pass hors d'oeuvres or how to pour wine or water at the table but we just want that good passionate attitude we want somebody that is innovative that can think for themselves so if they say whoops that needs to be fixed they'll come and if they can fix it themselves that's great if they can't they come to whomever they're their supervisor is and we get it we get it done they also have to be a team player as we all know there's no I in team so having people that are not prima donnas but are willing to work with other people and meld in with what the overall objective is that's very important and lastly someone that recognizes quality someone that can look at a table setting and say oh that Fork is crooked or that wine glass is backwards or you know where where is this or where is that the bread and butter plate is on the wrong wrong side things like that so those are things so action quality innovation and an ability to work in a team environment [Music] how was your experience been so far with our team so far so good and I've been very pleased with the culinary talent you've sent over as well as the service team that you've you've sent over so so far so good though what do you like most about a catering business and what do you like the least I love serving other people I love the great reviews that we receive at the end of every event I love the not reviews I love the wedding wire reviews I love the accolades I love seeing not only our guests smile but I love seeing my team smile that to me is more important than any dollar sign [Music] nobody cares how much you know until they know how much you care [Music]
