If you don't want the website (or you aren't interested) you can always unsubscribe and you will get an email when someone else registers to buy your item. There is no way of tracking sales on ebay.
The site should be registered as an escrow company. They are not allowed to take part in the transaction. They need to be a business that has the legal right to accept or reject any offer of payment. The site is not listed on any national or international registries.
There are many different ways to register an escrow company. It is not hard, especially you have a little bit of knowledge and time invested (and I do have some knowledge and time).
