hello my friends and welcome back to my channel tonight we are doing another cook with me i am bringing you along while i cook dinner tonight is a new recipe and it is called mexican street corn chicken casserole it sounds delicious especially if you like mexican street corn right right so without further ado we need to get dinner started because once again it's really late and we're hungry so i'm going to turn you around i'm going to show you the ingredients and then we're going to start cooking so the first thing i'm going to do is i'm going to season our chicken breasts now this is where you would just sprinkle on some of the salt garlic powder and cayenne but i'm going to use my trader joe's seasoning and just add a little of that and we're just going to set them aside and then we're going to start on the corn sauce okay like i said i am having this so instead of a quarter cup of mayonnaise i'm just using two tablespoons which is an eighth of a cup would have been easier to weigh but i'm being a little bit lazy tonight and then same thing on the sour cream we're just going to use two tablespoons of that oops should have just taken it off and then to that we're going to add a little bit of lime juice not a lot just a little bit and then we're going to add some chili powder just a hat one and a half teaspoons which i have right here and mix this all together and then we're going to add in our defrosted corn this bag is about two cups so i'm gonna add almost all of it i imagine in the summer when we have our delicious jersey fresh silver queen corn but this will be amazing i have my oven preheating to 350 degrees okay now we're just going to top the chicken with the corn and that's it for now we are going to pop this in the oven at 350 degrees for 30 to 40 minutes until the chicken cooks through then we're gonna take it out we'll garnish it with our cheese and our cilantro and it will be ready to eat here is our chicken right out of the oven it looks and smells delicious so now just to finish it off i've got two tablespoons of the queso fresco cheese use about a tablespoon per piece of chicken so if you're doing the full recipe with four pieces of chicken you use a quarter of a cup you just put it over the top the queso fresco comes you saw it in the big disk but it crumbles beautifully it has a taste almost like a mozzarella does not have a strong taste at all we're just going to crumble that over the top and then we're just going to sprinkle some fresh cilantro and there you have it our mexican street corn chicken casserole for the points it is three points on blue and three points on purple the only thing you really need to count is the little bit of mayonnaise a little bit of sour cream and a little bit of cheese and on green it's a little pointy because we're counting the corn and we're counting the chicken so if you use a standard chicken breast like four or five ounce chicken breast it's going to be 11 points the corn is what gets you so on green it is a little pricier but on blue and purple three points for this delicious dinner well my friends it was delicious really good really good flavor a little bit of spice but not spicy if that makes sense because you know i'm a spice wimp but it was really good so i highly recommend you give it a try if you like mexican street corn and it was quick and really easy too while the uh chicken was in the oven i got the whole kitchen cleaned up and i love meals like that we just steamed some potatoes with it and had some leftover green beans so worked out perfectly so i hope you enjoyed this cook with me if you did i would love if you would give it a thumbs up leave me a comment you know the drill subscribe comment like and share have a great night and i will see you all very soon you
