I have been a steakhouse chef for about 17 years. What I’m about to say is in essence my own personal opinions on steak. Most good chefs are on the same page when it comes to cooking a prime cutof steak. Pull steak out 10 to 20 minutes before cooking and bring it to room temperature. Session with kosher salt and fresh ground pepper. Some chefs like a dab of vegetable oil to help the session ingredients stick to the steak. Some chef like to use a marinade such as garlic and herb.My view has always been K.I.S.S. (Keep it simple stupid) less chance of muddling the flavors. I personal use a southbend Infrared broiler that signNowes 1800 degrees, this may not be something you have access to. Use a cast iron pan or bbq Weber grill. The whole point is to get a wonderful sear and a light char on the steak. When cooking your steak make sure that you do it quick, the key is to get that perfect sear quickly. If you followed the rule of pulling out the steak to room temp your steak will be perfectly medium rare, let the steak rest for 10 minutes.The whole purpose of allowing the steak to rest is that the blood that is found in the muscle has the opportunity to contract within the cell. As you know when you heat a cell it loses its water via expansion/evaporation which is what blood is made of. So allowing the steak to rest the blood cells contract and you are left with a juicy steak with very little blood loss.Then after you have let the steak rest flash it under the broiler for desired temperature such as medium and beyond. Most chefs will tell you to order lean cuts like filet to medium rare and fatty cuts such as ribeye to medium. There is nothing worse then undercooked fat. After you get your desired temperature brush with warm butter or cal-fat (animal fat that has been rendered/treacle) then cut it as you see fit.As for cuts of meat that’s all a matter of taste option and is so subjective that’s it’s a mind field. Personally I enjoy a sirloin cut of gold 5 rated wagyu steak the sister to Japanese Kobe, it is slightly less fatty. I cook it to medium and brush butter on it. Again my opinion not cannon or ment to upset people who love porterhouse cut, Del Monica cut or even a château Briand Cut. I can go on and on but the whole point to this is it’s your preference, but the experience is to get the best grade of steak and enjoy the cooking and eating experience.Don’t get me started on steak toppings and sauces that’s a whole difrent ball game. Yet it’s worth mentioning toppings like Oscar style, Diann style. Again all personal opinions and subjective.
