Menu design is a real academic discipline based on intensive empirical study and consumer psychology. It is taught at Cornell, Ecole Hôtelière de Lausanne, the Culinary Institute of America and other top hospitality institutes all over the world. The practice is difficult to master. Over the last thirty years, I've written hundreds of menus. Standard menus, dessert menus, wine lists, specialty menus, wedding reception menus...and I'm certain that no given menu will suffice for all people. A menu should:1. Be printed legibly, preferably using no more than two fonts and under no circumstances more than three (and only in that case by a designer with impeccable taste) in a point size that does not require an obnoxious lamp or reading device;2. Be spotlessly clean, either printed on fresh stock or encased in a simple menu folder. This problem has signNowed critical mass. I was once presented a menu containing two wet Cheerios in the fold. Cheerios weren't a menu selection, so I had to assume that the last person to use my menu was an 18 month old baby genius. The host staff is usually required to wipe down laminated menus/replace soiled paper throughout and at the end of the shift. (If the door to the restaurant is smudged with greasy fingerprints or food the menus will be, too. Go back to your car and drive away.)3. Be arranged in a logical categorical fashion; one should be able to find the desired category in seconds, not minutes or hours; wine lists that intimidate with bin numbers and oenophilic jargon will divide the market. (Words like "oenophilic.")4. Be designed for the market segment in which the establishment belongs; you'll suffer stock photography and thick plastic laminate at Chile's, intrinsically NOT at Per Se;5. Contain only enough copy to express the cooking idea that substantiates each entry. Google "Craft NYC" for one of the true, original successes at menu minimalism. If you're allergic to garlic, cumin, asafoetida, please say so. I have encountered HUNDREDS of "food allergies" over these years and accommodated every one, however specious. Many menus will note the bona fides: shellfish, peanuts, tree nuts, but a menu that lists every ingredient is tedious, overlong, and appetite-killing. The guest has come to escape work-- don't make reading the menu a chore. May as well pass around the recipe book from the prep room. 6. Include a well-conceived way of presenting prices. I was always fine with "18.00" or "$18". Then along comes "18." then "18" then "eighteen". Recently saw "~18" and thought, "Hmm, probably or roughly eighteen dollars." 7. Avoid copy, styling, and graphics that are twee, precious, pompous and/or condescending. Because of this, most chef/owners should pass this work on to an individual who is trained for it. I have never had a good "house Ceasar" nor do I enjoy "hors douvres". Typos rise up off the page and stab us in the eyeball with their sharp little sans serif ascenders. No excuses. Menus should be proofread by at least two knowledgeable people. Spell check contains few food terms. That's why the late Sharon Tyler Herbst's "The Deluxe Food Lover's Companion" should be in every restaurant office above the midscale feeders. 8. Not over-promise. If the menu says "prime" the steak had better not be "choice." (Which would be illegal in many places anyway.) Same goes for all those "famous" dishes mentioned by an earlier poster. If your chef is truly famous, we already know their name. Outside of foodie circles, it's a short list. Squishy menu language can be insulting. "Delectable" is a matter of personal taste, but just one "scrumptious" and I'm gone. Lastly: Food, consumed in normal quantities and of legal/ethical origin, is not immoral. Even rare, expensive items, assuming they don't appear on any endangered species lists. But I absolutely refuse to order your Chocolate Decadence or the Sinful Cappuccino. Because they will be neither, and I will be Disappointed.

For a bitmap result just drag the image onto Acrobat, or open the image file using the Acrobat File %3E Open menu command, making sure to select 'show all files' in the Open dialog.
